I recently went north to visit my children and witness my daughter Jennifer’s directorial debut of the Alliance Theatre production of ‘Little Shop of Horrors’. The play was fun and the entire cast did a great job. Jennifer is fourth from the top left. I especially loved the voice of Audrey II. Wonderful! Having a just little pull with the director I got to go up on stage and stood inside Audrey II. I was having so much fun I forgot to be terrified!
Kristine wanted to make something nice for us to have with coffee in the mornings. She did some research and found these wonderful pumpkin cream cheese muffins on website Annie’s Eats and they are just delicious.
They are easy to put together. Of course that is if you have all the ingredients on hand. I realized just how long I have been out of the kitchen when I started to put the recipe together. I had looked over the recipe and decided that all I needed was the cream cheese and pumpkin pie spice.
Well, that was until I got into the kitchen. I pulled everything together and for heaven’s sake I only had enough flour to make half the recipe. Oh, well I decided half a recipe was just fine and proceeded.
There are three steps, filling, muffin and topping. The filling needs to be rolled into a log and placed in the freezer for about two hours so plan accordingly. The muffin was easy to put together with the dough looking very creamy.
Now I was not paying attention when it came to the topping. I put it together and forgot to place it in the refrigerator while I was filling the cupcake papers and the butter got too soft. So, the topping instead of looking crumbly actually formed a wonderful glaze on the top of the muffins. Kristine’s was crumbly mine was not but both were just great.
As I have done in the past, I called my neighbors and official taste testers Eva and Bob. The back door had hardly closed when the phone rang and she said, “These are more than a 10+. They are so good. Not too sweet and I love the sugar topping”. I explained the mistake I had made with the topping and she did not care. I could hear Bob in the background making noises that relayed the message that he really enjoyed what he had just eaten.
So, try these out, they are wonderful and just great for Thanksgiving.
