Yummy Sonoma Chicken Sandwiches

As I have mentioned so many times, my daughter Kristine is always sending along recipes that she has come across, prepared and just loves. It is summer so I was especially eager to try this recipe because I find sandwiches to be a cool alternative to a hot meal during the sultry summer months.

Kristine found this recipe on Pinterest and a site called Cooking Classy with a Sprinkle of Fancy.  The recipe was very simple to prepare and all the ingredients needed were readily available in my pantry and refrigerator.

Sonoma Chicken Salad Sandwiches

Ingredients:

3 ½ cups cooked, shredded chicken (about 2 1/2 pounds boneless, skinless chicken breast halves)

1 cup diced celery (about 3 stalks)

2/3 cup chopped pecans

½ cup dried cranberries, such as Craisins, roughly chopped

2 Tbsp finely grated Parmesan cheese

Sliced bread

2/3 cup mayonnaise

¼ cup apple juice

3 Tbsp honey

2 tsp apple cider vinegar

1 tsp prepared yellow mustard (optional)

1 Tbsp poppy seeds

½ tsp onion powder

Salt and freshly ground black pepper to taste

Directions:

In a large mixing bowl toss together shredded chicken, celery, pecans, dried cranberries and Parmesan cheese, set aside.  In a separate mixing bowl whisk together all ingredients listed for the dressing until well blended.  Pour dressing mixture over chicken mixture and toss to evenly coat.  Serve over sliced bread, croissants or rolls.  Store in refrigerator. Yield 5-6 servings.

I loved the combination of soft and crunchy ingredients and the sweet and tart flavors of the dressing.  I piled this tasty combination of ingredients between two slices of five grain Italian sandwich bread.  The bread, made with whole grains and seeds, has a crunchy crust and a lovely soft texture that was a perfect choice for this wonderful and flavorful chicken salad.

It was so hot the day I prepared the sandwiches that I decided the perfect side dish was a small bowl of cold, ripe strawberries, watermelon, cantaloupe, honeydew melon and seedless red grapes.

What else could you ask for on a hot summer evening than a recipe that is easy and delicious?  The answer; yummy Sonoma Chicken Salad Sandwiches!

    I am going to prepare these. Also in my novel, the male main supporting character loves to try his hand in the kitchen–He prepares sandwiches for one of his meals. I have already given him the special ingredients for dressing, but I could tweak it to include honey. I like that idea.
